About this recipe: My little girl is obsessed with the movie Frozen. She wanted an Elsa cake, and despite my doubts about my baking and decorating abilities, I agreed. Fortunately, she and her friend came up with a solution - a single figurine set in the middle of the frosted cake is the extent of the decorating. Happy girl, happy mum, happy birthday!


Serves: 12 

  • 440g plain flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 5 eggs
  • 1 1/2 teaspoons vanilla extract
  • 275g butter, at room temperature
  • 400g caster sugar
  • 500ml buttermilk
  • 1kg buttercream frosting
  • rainbow sprinkles, to decorate

  1. Preheat oven to 180 C / Gas 4. Grease three (23cm) cake tins and line with baking parchment.
  2. In a mixing bowl, sift together the flour, baking powder, bicarb and salt; set aside. In a small bowl, whisk together the eggs and vanilla until frothy.
  3. Using a mixer on medium speed, beat the butter until creamy. Slowly beat in sugar, and continue beating for 3 to 5 minutes. Beat in the egg mixture. Reduce the speed to low and alternate adding the flour and buttermilk in three parts, scraping the sides of the bowl down into the centre to ensure even mixing. Divide the cake mixture between the three prepared cake tins and smooth the tops.
  4. Bake in the preheated oven until very light golden brown and a skewer inserted into the centre comes out clean, about 25 to 30 minutes. Remove from the oven and cool the cakes for a few minutes in the tins. Remove the cakes from the cake tins and cool completely on a cooling rack.
  5. Once cool, place the first cake layer on a serving plate then spread with some buttercream frosting, place the second layer cake on top and repeat. Finally place the third layer on top and cover top and sides with the remaining frosting. Decorate with rainbow sprinkles; place a plastic Elsa figurine into the centre of the cake. Slice and serve.
