Preheat oven to 200 C / Gas 6 and line a 12-hole muffin tin with paper cases.
Place the flour, baking powder, cocoa powder, sugar and chocolate chips into a mixing bowl and mix. Combine the remaining liquid ingredients into a jug or bowl then gradually add to the dry ingredients, taking care not to over mix; it will be a lumpy but runny mixture. Spoon into the prepared muffin cases filling only to half way to ensure a good rise. Sprinkle a few more chocolate chips on top.
Bake in the preheated oven for 20 minutes or until risen, springy and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooking rack. Dust with icing sugar for a perfect finish and serve.
Instead of doing one type of chocolate chips, you could mix 75g white and 75g dark chocolate chips for a variation.
