Extra rich chocolate muffins

    Makes: 12 rich chocolate muffins

    • 250g self-raising flour
    • 2 teaspoons baking powder
    • 2 tablespoons cocoa powder (e.g. Bournville cocoa powder)
    • 175g caster sugar
    • 150g chocolate chips, plus more for sprinkling (see tip)
    • 1 teaspoon vanilla extract
    • 1 large egg
    • 250ml milk
    • 90ml vegetable oil
    • icing sugar, for dusting

    1. Preheat oven to 200 C / Gas 6 and line a 12-hole muffin tin with paper cases.
    2. Place the flour, baking powder, cocoa powder, sugar and chocolate chips into a mixing bowl and mix. Combine the remaining liquid ingredients into a jug or bowl then gradually add to the dry ingredients, taking care not to over mix; it will be a lumpy but runny mixture. Spoon into the prepared muffin cases filling only to half way to ensure a good rise. Sprinkle a few more chocolate chips on top.
    3. Bake in the preheated oven for 20 minutes or until risen, springy and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooking rack. Dust with icing sugar for a perfect finish and serve.

    Chocolate chips

    Instead of doing one type of chocolate chips, you could mix 75g white and 75g dark chocolate chips for a variation.
