    About this recipe: This recipe will make a lovely spicy and flavour packed breadcrumb coating ideal for fried chicken, oven baked chicken pieces or potato wedges.

    Ingredients
    Makes: 1 (200g) batch appoximately

    • 2 rounds stale sliced bread, broken into 2.5cm (1 in) pieces
    • 1 teaspoon smoked paprika
    • 1 teaspoon ground cumin
    • 1 teaspoon garlic granules or powder
    • 1 teaspoon dried oregano
    • 1 teaspoon ground coriander
    • 1 teaspoon chilli powder, or to taste
    • 1 teaspoon cornflour
    • 1 dash salt and pepper

    Method

    1. Preheat the oven to 100 C / Gas 1/4.
    2. Spread the bread out over a baking tray.
    3. Bake in the preheated oven for 1 hour or until all moisture has gone from bread. Remove from the oven and transfer to a food processor. Add the remaining ingredients and blitz until everything is combined to form a fine breadcrumb consistency, depending on how fine you like your breadcrumbs. When mixed you can either store in airtight container for later or use immediately.
