    About this recipe: This is my own bake that all my friends and family LOVE! Feel free to use raisins, sultanas or even peanut butter.

    Makes: 12 raisin cookies

    • 75g ( 2 1/2 oz) soft butter or margarine
    • 75g (2 1/2 oz) light brown soft sugar
    • 1 teaspoon vanilla extract
    • 100g (3 1/2 oz) self raising flour
    • 75g (2 1/2 oz) raisins or sultanas or peanut butter

    1. Preheat the oven to 180 C / Gas 4. Grease two baking trays.
    2. Into a mixing bowl combine the soft butter or margarine and brown sugar and beat well. Stir in the vanilla extract followed by the flour and fruit or peanut butter and mix thoroughly; now you should have a doughy sort of mixture. Shape them or form them into balls and place onto prepared baking trays.
    3. Bake in the preheated oven for 15 minutes until golden brown. Remove from the oven and allow to cool on a cooling rack before serving. Enjoy your cookies!


    I recommend for people with a sweeter tooth to go for marshmallows or mini marshmallows in addition to or instead of the fruit.
