Diabetes friendly Sri Lankan chicken curry

    This delicious Sri Lankan chicken curry recipe is perfect to warm you up on a chilly winter evening and will bring the whole family to the table. The recipe is specifically designed for those with diabetes by the ingenious Anita-Clare who’s successfully combined great flavours with healthy ingredients for an amazing dish!

    Serves: 4 

    • 4 boneless skinless chicken breasts
    • 2 tablespoons cider vinegar
    • 1 teaspoon tamarind paste
    • 1 tablespoon madras curry powder
    • 1 large pinch salt
    • 1 large pinch black pepper
    • 2 tablespoons coconut oil
    • 2 red onions, finely sliced
    • 4 green chillies, halved lengthways
    • 4 green cardamom pods
    • 4 whole cloves
    • 12 curry leaves
    • 1 (2.5cm) piece fresh ginger, freshly grated
    • 1/2 cinnamon stick
    • 5 cloves garlic, minced
    • 100ml water
    • 2 tablespoons tomato purée
    • 1 tablespoon garam masala
    • 1/2 tin coconut milk

    1. Cut the chicken breasts into bite-sized pieces. Mix together the vinegar, tamarind paste, curry powder, salt, and pepper in a bowl.
    2. Add chicken and toss to coat. Leave to marinade for an hour. Next, heat the coconut oil in a wok over medium heat.
    3. Sauté the sliced onion, green chillies, cardamom pods, cloves, curry leaves, ginger, and cinnamon stick until the onion has softened and turned translucent, this usually takes around 5 minutes.
    4. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
    5. Stir in the garlic and cook for an additional minute. Add the chicken mixture, water, and tomato puree. Stir and simmer until the chicken is cooked through, about 10 minutes.
    6. Add the garam masala and stir until evenly dispersed. Gradually stir in the coconut milk and simmer for another couple of minutes and serve with basmati rice.
