About this recipe: I hope you will like this cake as much as I do. Simple to make and great to eat! I like to enjoy my cakes with a mug of green tea, but how you enjoy it is really up to you.

  • 60g unsalted butter, at room temperature
  • 100g golden caster sugar
  • 2 large eggs
  • 80ml single cream
  • 2 teaspoons vanilla extract
  • 250g plain flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 100g milk chocolate chips
  • 50g icing sugar
  • 1 tablespoon milk

  1. Preheat oven to 180 C / Gas 4. Grease a 900g, 22x13cm (9x5 in) loaf tin.
  2. In a large bowl beat together the butter and sugar until fluffy, then add one egg at a time to the mixture, beating well until pale and creamy. Finally stir in the cream and vanilla extract.
  3. Gradually sift the flour while mixing, then add the baking powder, salt, cinnamon and chocolate chips to the mixture and combine. The mixture should be thick. Spoon into the prepared baking tin.
  4. Bake in the preheated oven for 45 to 55 minutes or until a wooden skewer or knife inserted into the centre comes out clean. Remove from the tin and allow to cool.
  5. While the loaf is cooling make the glaze in a small bowl by combining the icing sugar and milk. You can keep adding more icing sugar until you reach desired thickness, then drizzle over the loaf. Slice and serve.
