Meat free mascarpone chicken and bacon pasta

    My son is a bit reluctant to eat meat at the moment so with him liking Quorn® burgers, I thought I would try a meat free version.

    Serves: 4 

    • 500g pasta of your choice
    • 1 (400g) tin chopped tomatoes
    • 1 (250g) tub mascarpone cheese
    • 300g Quorn® chicken fillets, chopped
    • 150g Quorn® bacon slices, chopped
    • grated cheese of your choice, to taste
    • 1 pinch salt and pepper

    1. Preheat the oven to 200 C / Gas 6.
    2. Bring a saucepan of lightly salted water to the boil over a high heat. Add the pasta and cook according to the instructions on the packet, or until al dente. Drain and transfer to an ovenproof baking dish.
    3. Into a saucepan combine the tomatoes and mascarpone cheese and warm over a medium heat. Add the Quorn® chicken and bacon and stir through; pour over the pasta and stir to mix. Sprinkle over the cheese and season to taste.
    4. Bake in the preheated oven for 20 to 30 minutes until bubbling and the cheese is golden brown. Remove from the heat and serve.
