Ginger and lemongrass cordial

    This aromatic cordial is a great partner to Thai food.

    • 175 g (6 oz) preserved stem ginger
    • 4 tablespoons ginger syrup from the jar
    • 1 tablespoon lemongrass purée
    • 2 litres (3 pints 10 fl oz) sparkling mineral water
    • Ice cubes

    1. Put the stem ginger, syrup, lemongrass purée and 150 ml (5 fl oz) of the sparkling mineral water into a blender and process to a smooth purée.
    2. Pour into glasses, add mineral water to taste and ice cubes, and serve.
    3. Tip: lemongrass purée is available in small jars or tubes in supermarkets.
