Ginger and lemongrass cordial

About this recipe:
This aromatic cordial is a great partner to Thai food.
175 g (6 oz) preserved stem ginger
4 tablespoons ginger syrup from the jar
1 tablespoon lemongrass purée
2 litres (3 pints 10 fl oz) sparkling mineral water
- Put the stem ginger, syrup, lemongrass purée and 150 ml (5 fl oz) of the sparkling mineral water into a blender and process to a smooth purée.
- Pour into glasses, add mineral water to taste and ice cubes, and serve.
- Tip: lemongrass purée is available in small jars or tubes in supermarkets.
