Chinese-style egg fried rice

    This is a very simple and tasty dish. I normally cook this with king prawns and Chinese style stir fry with a sweet chilli sauce. It only takes 10 minutes to cook so its a great meal if you have just got home from work.

    Serves: 2 

    • 3 large eggs
    • 2 tablespoons milk
    • 1 pinch salt
    • 3 tablespoons toasted sesame seed oil
    • 6 spring onions, finely chopped
    • 2 packets Uncle Ben's® or Veetee® microwavable basmati rice
    • 4 tablespoons soya sauce

    1. Whisk the eggs in bowl with milk and pinch of salt.
    2. Heat 1 tablespoon of the toasted sesame seed oil in large frying pan or wok. Next add spring onions to oil and fry for 30 seconds then add egg mixture and scramble but do not over cook egg.
    3. Add 1 packet of the rice to egg mixture and stir in. Next add another tablespoon of sesame oil to rice and stir. Then add second packet if rice and follow this process again. Add the soya sauce, stir fry for 2 minutes further then serve.
