Preheat the oven to 170 C / Gas 3. Grease a 900g (2 lb) loaf tin and line with baking parchment.
Melt the butter, sugar and vanilla extract in a saucepan over a medium heat. Remove from heat and add mashed banana. Allow to cool to room temperature if still warm then add the egg followed by the flour and milk and mix until everything is well combined. Spoon into the prepared cake tin and sprinkle with demerara sugar.
Bake in the preheated oven for 35 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooling rack. Cut into slices and serve.
