Cardamom-spiced grape juice

    Spicy grape juice, served chilled or hot, is a drink for all seasons.

    Serves: 4 

    • 1 litre (1 pint 15 fl oz) red grape juice
    • Pared zest and juice of 1 large orange
    • A pinch of ground allspice
    • 12 green cardamom pods, lightly crushed
    • 10 cm (4 in) cinnamon stick
    • 6 cloves
    • 25 g (1 oz) caster sugar
    • Crushed ice, optional

    1. Combine all the ingredients in a large saucepan and simmer over a medium heat for 5 minutes, then reduce the heat to low and continue simmering for 10 minutes. Remove from the heat and leave to cool for 1 hour.
    2. Strain the juice into a jug. Chill for 1 hour, or serve over crushed ice.
    3. Variation: to serve the drink hot, strain the juice as in Step 2, then reheat gently and serve it with a cinnamon stick in each glass to stir.
