No-sugar healthy granola

    This warm, spiced granola is perfect for a healthy, filling breakfast cereal. Honey sweetens this recipe, so no added sugar!

    Serves: 8 

    • 485g rolled oats
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground allspice
    • 1/4 teaspoon ground nutmeg
    • 160g runny honey
    • 120ml extra virgin olive oil
    • 2 teaspoons vanilla extract
    • 90g pumpkin seeds
    • 145g raisins or sultanas

    1. Preheat the oven to 150 C / Gas 2.
    2. Mix together the oats, salt, and spices in a large mixing bowl.
    3. Mix the wet ingredients together in a separate bowl, and carefully add this mixture to the dry ingredients. Stir in the pumpkin seeds, then spread the mixture out over a large shallow baking tray.
    4. Bake for 40 minutes to an hour, stirring every ten minutes to break up chunks. When the granola looks golden-brown all over, remove from the oven and pour into a large plastic storage box to cool. Once cooled, stir in the raisins or sultanas. Enjoy!
