Place the bacon in a dry frying pan over a medium heat and fry until crispy, about 8 minutes. Transfer to a bowl and add the pepper and sweetcorn; mix well. Finally, mix in one of the eggs to bind it all together.
Flour a kitchen surface, and roll out pastry until 1/2cm thick. Once rolled out, divide it (but don't cut it, just imagine) into 3 columns length ways.
Cut slits on the two outer columns, all the way down, then add your mixture and spread it down the middle column.
Whisk up the other egg, and brush it over the slits. Fold over the slits on top of the mixture, like a plait. Egg wash the outer pieces of the pastry once folded over.
Bake in the preheated oven for 20 minutes, or until golden brown on the outside. Remove from the oven and serve warm, or allow to cool on a baking tray before enjoying.
