Meaty macaroni cheese

    My family's favourite dishes are both spaghetti bolognese and macaroni cheese, so I thought I'd combine these two dishes into one and it was amazing!!

    Serves: 4 

    • 1 to 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 1 clove garlic, minced
    • 500g beef mince
    • 1 (200g) tin sweetcorn, drained
    • 1 (400g) tin chopped tomatoes
    • 1 teaspoon dried mixed herbs
    • salt and pepper, to taste
    • 225g dried macaroni
    • 40g margarine
    • 40g plain flour
    • 500ml whole milk
    • 2 teaspoons Dijon mustard
    • 200g grated Cheddar cheese

    1. Add a little olive oil to a saucepan and heat. Once heated add the onion and garlic and cook and stir over a medium heat until softened. Add the beef and cook for 10 minutess or until lightly browned all over.
    2. Once the meat is browned add the sweetcorn, tomatoes, mixed herbs and salt and pepper to your liking. Reduce heat, cover and simmer, stirring occasionally for about 25 to 30 minutes.
    3. Bring a saucepan of water to the boil over a high heat. Add macaroni and a bit of salt and cook according to the instructions on the packet or until al dente. Drain.
    4. Melt margarine in a saucepan over a medium heat and add flour and stir until all combined. Remove saucepan from heat and stir in the milk a little at a time. Once all milk has been added return to heat and bring to the boil, stirring constantly. Once it starts boiling, lower the heat and stir for 5 minutes until the sauce has thickened.
    5. Remove saucepan from heat and stir in the mustard and 150g grated cheese stirring well until melted. Add the drained macaroni into the cheese sauce, stirring well to mix.
    6. Preheat the grill to medium high.
    7. Place the beef mixture onto a baking dish, cover with the macaroni mixture, then sprinkle the remaining grated cheese over and place under the pre-heated grill for 4 to 5 minutes or until golden brown. Remove from the heat, serve immediately and enjoy!


    Instead of the sweetcorn try adding other vegetables, carrots, mushrooms, etc. Let me know which ones are your favourite!
