Priscilla's meatloaf

    I love cooking with minced beef and meatloaf is my favourite dish. I served mine with some marinated green beans but it is also lovely with cauliflower cheese. I have also made this recipe with minced lamb and it's delicious! You can also try it with minced pork or chicken.

    Serves: 4 

    • 250g beef mince
    • salt and pepper, to taste
    • 100g grated cheese of your choice
    • 100g breadcrumbs
    • 2 teaspoons ground cumin
    • 3 garlic cloves, finely chopped
    • 2 to 3 large eggs
    • 150g sausage meat
    • 3 hard boiled eggs
    • 8 to 10 rashers smoked bacon
    • 1 small onion, sliced
    • 2 Oxo® beef cubes
    • 50g margarine
    • 4 large potatoes
    • 100ml to 200ml beef gravy

    1. Preheat the oven to 180 C / Gas 4.
    2. In a bowl add the beef, salt, pepper, cheese, breadcrumbs, 1 teaspoon cumin, finely chopped garlic and eggs until all combined and sticks together.
    3. Place foil paper in your worktop area and place meat over spreading evenly.
    4. Place sausage meat over and spread evenly over the beef.
    5. Place the boiled eggs on one end of the spreaded mixture and roll beef starting on the end where the eggs are until all rolled out.
    6. Place the bacon rashes over the rolled beef and cover with the foil, tightening the ends.
    7. Bake the meatloaf in the preheated oven for 20 minutes.
    8. Meanwhile, in an ovenproof baking dish add the sliced onion, salt, pepper, 1 teaspoon cumin, beef stock cubes and margarine and add boiling water to cover up to about half the dish and mix well.
    9. Peel and cut potatoes into quarters and add to the oven dish and place in the oven under the meatloaf for approximately 15 minutes.
    10. Once the potatoes are about half way done remove together with meatloaf from oven. Remove foil from meatloaf and add to the centre of the oven dish together with the potatoes.
    11. Return to the oven to continue to cook until the beef is no longer pink in the centre. Check occasionally once it starts to brown turn to brown the other side.
    12. Once browned all over and potatoes are tender when pierced with a fork, remove from oven, cut meatloaf into slices and serve with the potatoes and gravy. Enjoy!
