Vegan aubergine dip

    This vegan aubergine dip can be part of a mezze or used as a sandwich filling.

    Serves: 6 

    • 1 large or 2 small aubergines
    • 2 tablespoons olive oil
    • salt and pepper
    • 1 teaspoon sugar

    1. Preheat oven to 200 C / Gas 6.
    2. Wash the aubergines well with cold water. Prick aubergines with a fork over the entire surface. Spray it with oil and place on a baking tray.
    3. Bake for 5 minutes. The skin should be browned but not scorched.
    4. Remove from oven and peel while still hot. If it is fully cooked, it is easy to peel.
    5. Add the pulp to a bowl and puree with a hand blender, adding the oil in a thin stream. Season with salt, fresh gorund pepper and sugar.
