Green chimichurri

    This chimuchurri is delicious for grilled meat and roasts. Our friend Juan prepares it whenever he invites us.

    Ingredients
    Serves: 8 

    • 2 garlic clove, minced
    • 3 tablespoons minced parsley
    • 1 tablespoon dried oregano
    • 1 tablespoon chilli powder
    • 1 bay leaf, crumbled
    • 1 pinch sugar
    • 4 tablespoons of warm water
    • salt and pepper to taste
    • 2 tablespoons white vinegar
    • olive oil or a mix of olive and rapeseed oil

    1. In a medium bowl mix all the dry ingredients. Add water and stir well. Set to one side so the dried oregano can rehydate.
    2. Add salt and pepper to taste. Add the vinegar and stir. Incorporate enough oil to obtain a thick sauce. Taste and add more salt and pepper if desired. Leave to marinate for 1 hour so the flavours can meld.
