Pineapple, raisin and carrot salad


    If you love the freshness and sweetness of the pineapple, this salad is just perfect for you. Pineapple, carrots and raisins with a mayonnaise based dressing create this ideal and gourmet side dish.

    Serves: 6 

    • 4 large carrots
    • 3 tablespoons raisins
    • 1/2 tin (about 210g) sliced pineapple
    • 3 tablespoons mayonnaise
    • salt and pepper, to taste
    • 4 tablespoons pineapple juice (from tin)

    1. Grate carrots either by hand or by using a food processor. Place in a salad bowl and add raisins.
    2. Drain pineapple from tin, reserving its juice. Dice sliced pineapple and add to salad.
    3. Add mayonnaise and toss until combined. Season with salt and pepper to taste, and drizzle with 4 tablespoons of reserved pineapple juice. Mix and chill well before serving.
