    About this recipe: Just like shop-bought marinated feta. The feta keeps for three weeks in a jar as long as the marinade covers it. Serve with salads or pittas. Makes a great party nibble when skewered with cherry tomatoes.

    Serves: 6 

    • 375g feta cheese
    • 125ml olive oil
    • 3 tablespoons red wine vinegar
    • 1 teaspoon paprika
    • 2 teaspoons cracked peppercorns
    • 3 dried red chillies
    • 2 teaspoons dried oregano
    • 2 teaspoons dried tarragon

    1. Dice feta into 1cm cubes. Place in bowl.
    2. Whisk together oil, vinegar, paprika, peppercorns, chillies, oregano and tarragon. Toss with cheese.
    3. Cover and refrigerate. Leave to marinate for two days, turning cheese occasionally
