Baked salmon fillets with pesto

    This salmon topped with pesto is baked in the oven and served on a bed of veg. Minimal effort for a lot of taste.

    Serves: 6 

    • 6 skinless salmon steaks
    • 1/2 lemon, juiced
    • salt and pepper
    • 3 tablespoons pesto, ready made or homemade
    • 2 tomatoes, chopped
    • 1 red pepper, seeded and diced
    • 1 red onion, minced
    • 3 tablepoons capers
    • 1 garlic clove, minced
    • 3 tablespoons olive oil

    1. Preheat the oven to 200 C / Gas 6. Lightly oil a baking dish.
    2. Season the salmon fillets with lemon juice, salt and pepper. Place them in the dish and spread the pesto on top.
    3. Bake till the fish easily flakes with fork, about 30 minutes.
    4. Meanwhile, in a bowl combine tomato, pepper, onion, and capers. Season with salt, pepper, garlic, and olive oil.
    5. Spoon some of the veg mix on each plate and top with a salmon fillet.
