Baked salmon fillets with pesto

Serves: 6
- 6 skinless salmon steaks
- 1/2 lemon, juiced
- salt and pepper
- 3 tablespoons pesto, ready made or homemade
- 2 tomatoes, chopped
- 1 red pepper, seeded and diced
- 1 red onion, minced
- 3 tablepoons capers
- 1 garlic clove, minced
- 3 tablespoons olive oil

- Preheat the oven to 200 C / Gas 6. Lightly oil a baking dish.
- Season the salmon fillets with lemon juice, salt and pepper. Place them in the dish and spread the pesto on top.
- Bake till the fish easily flakes with fork, about 30 minutes.
Meanwhile, in a bowl combine tomato, pepper, onion, and capers. Season with salt, pepper, garlic, and olive oil.- Spoon some of the veg mix on each plate and top with a salmon fillet.
