Looking for ways to cook healthier with less oil, I make these chard croquettes with rice from the previous day and baked them in the oven. They are either a vegetarian main course or a side dish with meat or chicken.

Ingredients
Serves: 2
160g cooked white rice
300g cooked chard, drained and chopped
2 tablespoons oil
1 onion, minced
salt and pepper
2 tablespoons grated cheese
2 tablespoons plain flour
1 egg, lightly beaten

Preheat the oven to 200 C / Gas 6. Oil a baking tray and set to one side.
In a pan heat 2 tablespoons oil and fry the onion till soft. Add the chard and season with salt and pepper. Remove from heat and add everything to a bowl. Add the grated cheese, flour, beaten egg and rice. Mix till well combined.
Take portions and form croquettes the size of a ping pong ball. Place them on the baking sheet and spray with cooking spray.
Bake in the preheated oven till lightly browned, about 40 minutes.
