Chard and rice croquettes

    Looking for ways to cook healthier with less oil, I make these chard croquettes with rice from the previous day and baked them in the oven. They are either a vegetarian main course or a side dish with meat or chicken.

    Serves: 2 

    • 160g cooked white rice
    • 300g cooked chard, drained and chopped
    • 2 tablespoons oil
    • 1 onion, minced
    • salt and pepper
    • 2 tablespoons grated cheese
    • 2 tablespoons plain flour
    • 1 egg, lightly beaten
    • cooking spray

    1. Preheat the oven to 200 C / Gas 6. Oil a baking tray and set to one side.
    2. In a pan heat 2 tablespoons oil and fry the onion till soft. Add the chard and season with salt and pepper. Remove from heat and add everything to a bowl. Add the grated cheese, flour, beaten egg and rice. Mix till well combined.
    3. Take portions and form croquettes the size of a ping pong ball. Place them on the baking sheet and spray with cooking spray.
    4. Bake in the preheated oven till lightly browned, about 40 minutes.
