Sweet Yorkshire pudding with fruit compote

    We like to eat these sweet Yorkshire puddings with a berry compote for brunch on special weekends.

    Makes: 12 Yorkshire puddings

    • 150g self-raising flour
    • 1 pinch salt
    • 250ml milk
    • 2 eggs
    • 3 tablespoons neutral oil
    • 3 tablespoons honey
    • 1 teaspoon vanilla extract
    • 200g red berries, fresh or frozen and thawed
    • 3 tablespoons caster sugar
    • 4 tablespoons icing sugar for dusting
    • whipped cream for serving

    1. Preheat the oven to 200 C / Gas 6. Spray a muffin tin with oil and place it in the ofen while it's preheating.
    2. In a bowl, sift together the flour and salt. Add the eggs, milk, oil, honey, vanilla extract and mix well with a fork or a whisk till smooth.
    3. Remove the muffin tin from the oven and quickly pour the batter in the muffin cups. Bake for 20 minutes.

    5. In a saucepan over medium heat, place the red berries and sugar; cook until the juice is reduced, about 10 minutes. Set to one side.
    6. Remove the puddings from the oven and dust with icing sugar. Serve with the fruit compote and whipped cream.
