Melon and prosciutto skewers

    Love melon and prosciutto? Try this perfect combination as a starter. These delicious skewers are served over mixed greens with a delicate lemon vinaigrette.

    Serves: 4 

    • 300g thinly sliced prosciutto
    • 1 small ripe melon (e.g. cantaloupe) - peeled, seeded and cubed
    • 4 handfuls mixed green salad leaves
    • 2 to 4 tablespoons extra virgin olive oil
    • juice of 1 lemon
    • salt and pepper, to taste

    1. Roll up slices of prosciutto, and cut in half. Working with 8 wooden skewers, alternate threading the melon cubes and pieces of rolled prosciutto onto the skewers, until the ingredients are used up. Place a handful of mixed greens onto four serving plates.
    2. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper then drizzle dressing over the mixed greens and arrange 2 skewers on top of each plate. Serve immediately.
