    Serves: 4 

    • 3 kiwi fruits, peeled
    • 4 tablespoons caster sugar
    • 300ml chilled double cream

    1. Add kiwi fruit to a blender or food processor, saving 4 slices for the garnish, with 1 tablespoon of sugar and mix until pureed. Set aside.
    2. Beat double cream with 3 tablespoons of sugar until soft peaks are formed.
    3. Into 4 dessert glasses, add 1 tablespoon of kiwi fruit puree followed by 1 heaped tablespoon of cream on top. Repeat layers, finishing with cream. Garnish with a slice of kiwi and chill in the fridge until time to serve.
