About this recipe: Looking for a fancy yet simple salad? Try this divine salad that combines the flavours of red pears, rocket, shaved Parmesan cheese and seasoned with a classic balsamic vinaigrette.


Serves: 4 

  • 80g baby rocket mix
  • 1 red pear
  • 60g walnuts, roughly chopped
  • 40g Parmesan cheese
  • For the dressing
  • 1 tablespoon balsamic vinegar
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • freshly ground pepper, to taste

  1. Place previously washed rocket mix in a salad bowl. Cut pear in half and remove core. Thinly slice it and spread slices over rocket leaves. Sprinkle with chopped walnuts.
  2. Make Parmesan shaves with a potato peeler and spread over salad. In a separate bowl, whisk olive oil with balsamic vinegar and season with salt and pepper to taste. Drizzle vinaigrette over salad before serving.
