About this recipe: This simple yet delicious green leaf salad is a wonderful served alongside a whole variety of meat or poultry dishes.


Serves: 4 

  • 3 bunches fresh rocket
  • 1 avocado, thinly sliced
  • 2 hard boiled eggs, chopped
  • For the dressing
  • 1 tablespoon lemon juice, freshly squeezed
  • 3 tablepoons olive oil
  • salt and pepper, to taste

  1. Place the rocket leaves in a colander and rinse well with cold water. Pat dry with a kitchen towel. Mix in a large salad bowl with the avocado slices and chopped hard boiled eggs.
  2. In a separate bowl, prepare the dressing by mixing well all ingredients with a whisk until combined. Drizzle dressing over salad and toss well before serving.
