About this recipe: Pears and fennel complement each other so well. Add the crunchiness and nutty flavour of almonds and serve it with a crusty slice of rustic bread for a delicious lunch.


Serves: 2 

  • 1 fennel bulb, finely sliced
  • 1 pear
  • 2 tablespoons flaked almonds
  • For the dressing
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons olive oil
  • salt and pepper, to taste

  1. Thinly slice the fennel bulb with a sharp knife or mandolin slicer. Peel and core the pear, and then cut into thin sticks. Combine both in a salad bowl and mix well. Sprinkle with almonds.
  2. For the dressing, mix the balsamic vinegar, olive oil and salt and pepper in a small bowl. Whisk well, drizzle over salad and serve.
