Tomato and herbs tarte tatin

    This beautiful savoury tart looks and tastes amazing with caramelised cherry tomatoes and mixed fresh herbs.

    Serves: 6 

    • 2 tablespoons olive oil
    • 250g cherry tomatoes
    • 2 tablespoons balsamic vinegar
    • 3 tablespoons caster sugar
    • 1 pinch salt
    • 1 tablespoon mixed fresh herbs (e.g. basil, parsley, rosemary and thyme)
    • 1 sheet shortcrust pastry

    1. Preheat oven to 200 C / Gas 6.
    2. In a medium oven proof frying pan, heat olive oil over medium heat. Add cherry tomatoes, balsamic vinegar and sugar. Cook, with minimum stirring, for 4 minutes. Season with salt and chopped fresh herbs mixture. Lay the pastry over the top pushing edges onto the pan.
    3. Bake in the oven until pastry is lightly browned. Remove, allow to sit for 4 minutes, and invert over a platter. Cut in slices and serve.
