This is a simple, rich and very fresh dessert with strawberries or other berries that you can prepare in a flash. It can also be used as a cake filling.

4 fresh egg whites, beaten till stiff
500g strawberries or other red berries
5 tablespoons caster sugar
250g double cream

Puree strawberries with sugar till smooth. Place in a bowl. In another bowl, beat the cream till it forms soft peaks. Fold in strawberry puree and egg whites. Pour into dessert bowls or glasses and chill till serving.
