About this recipe: Looking for a side salad to serve when out cooking from the BBQ? Try this simple yet sophisticated salad with the combination of fresh leafy greens, red peppers and sundried tomatoes, topped with shaved Parmesan. It is just lovely!


Serves: 5 

  • 2 medium bunches rocket leaves
  • 75g sundried tomatoes, thinly sliced
  • 1 red pepper, seeded and cut in strips
  • 50g Parmesan cheese, shaved
  • For the dressing
  • 5 tablespoons corn oil
  • 3 tablespoons balsamic vinegar
  • salt and pepper, to taste

  1. Wash and pat dry the rocket leaves then toss in a large salad bowl. Sprinkle sundried tomatoes and pepper on top. Decorate with shaved Parmesan.
  2. In the meantime, prepare salad dressing by combining all ingredients in a small bowl and mixing well. Drizzle over salad and serve immediately.
