Rice and cheese croquettes

    An ideal recipe to use leftover rice. My kids love it for the lunch. Super easy and only few ingredients.

    Serves: 3 

    • 2 eggs
    • 160 to 240g cooked rice
    • 2 to 3 tablespoons grated Parmesan cheese
    • salt and pepper
    • 1 pinch ground nutmeg
    • sunflower oil for frying

    1. In a bowl lightly beat the eggs. Add the rice and the grated cheese and mix well. Season with salt, pepper and nutmeg.
    2. Heat enough oil in a frying pan over medium heat. Place a heaped spoonful of the mixture and fry until golden brown. Turn with a slotted spoon, and fry till browned on the other side as well.
    3. Remove and drain on a plate with kitchen paper.
