2 large eggs
2 tablespoons grated Parmesan cheese
1 spring onion, finely chopped
1 teaspoon oil
4 to 5 marinated artichokes
1 slice ham, sliced
1 tomato, cubed
20g mozzarella cheese, cubed
salt and pepper, to taste

Beat the eggs in a bowl with the grated Parmesan. Add salt and pepper to taste.
In a 10cm oven-safe frying pan, heat the oil and spring onions on medium heat. When oil starts sizzling, add eggs, swirl the pan to spread evenly and cook for 5 to 7 minutes or until the eggs start getting firm.
Preheat the oven to 180 C / Gas 4.
Add the artichokes, ham and tomatoes. Transfer to the oven and cook for 5 minutes or until the tomatoes lose some water.
Remove from oven, add the cubed mozzarella and grill for a few minutes, until the cheese is melted.
Remove from oven, let cool a bit in the pan and then place on a serving plate. Serve with bread or focaccia.
