Tomato, ham and artichoke frittata

    This is a single portion frittata, cooked on the hob first and then transferred to the oven.

    Serves: 1 

    • 2 large eggs
    • 2 tablespoons grated Parmesan cheese
    • 1 spring onion, finely chopped
    • 1 teaspoon oil
    • 4 to 5 marinated artichokes
    • 1 slice ham, sliced
    • 1 tomato, cubed
    • 20g mozzarella cheese, cubed
    • salt and pepper, to taste

    1. Beat the eggs in a bowl with the grated Parmesan. Add salt and pepper to taste.
    2. In a 10cm oven-safe frying pan, heat the oil and spring onions on medium heat. When oil starts sizzling, add eggs, swirl the pan to spread evenly and cook for 5 to 7 minutes or until the eggs start getting firm.
    3. Preheat the oven to 180 C / Gas 4.
    4. Add the artichokes, ham and tomatoes. Transfer to the oven and cook for 5 minutes or until the tomatoes lose some water.
    5. Remove from oven, add the cubed mozzarella and grill for a few minutes, until the cheese is melted.
    6. Remove from oven, let cool a bit in the pan and then place on a serving plate. Serve with bread or focaccia.
