Friselle (Italian snack bread)

    Friselle is a twice baked dried wheat bread from the Italian region of Puglia. It is also known as Pugliese rusk bread. Friselle can be found in Italian specialty stores or online. The classic recipe is with topping of fresh tomatoes.

    Makes: 4 friselle

    • 4 durum wheat or whole wheat friselle
    • 10 ripe cherry tomatoes
    • extra virgin olive oil
    • salt
    • oregano

    1. Fill a small bowl with cold water. Immerse the friselle, one at a time, for a few seconds. When bubbles begin to form in the water, take them out. Do not to soften the friselle too much, they should still be crisp in the centre.
    2. Drizzle each frisella with oil. Halve tomatoes and top each frisella with tomato halves. Season with a pinch of salt and oregano and serve immediately.


    Add slices of mozzarella or provolone cheese or prosciutto.
