Cantuccini (Tuscan almond biscotti)

    Cantuccini are a famous Italian biscuit, most often enjoyed alongside a glass of vin santo. These are easy to make and keep well; perfect for gifts or filling the biscuit tin.

    Makes: 500 g biscotti

    • 350g caster sugar
    • 4 eggs
    • 500g plain flour
    • 150g melted butter
    • 200g almonds, skin on, roughly chopped
    • 1 egg yolk, beaten

    1. Preheat oven to 180 c / gas 4. Line a baking tray with parchment.
    2. In a large bowl, beat eggs with sugar until pale.
    3. Sift in the flour, a little at the time, and stir well.
    4. Add melted butter, chopped almonds and mix to form a soft dough.
    5. Shape the dough into a log and transfer to the baking tray. Brush the log with the egg yolk.
    6. Bake in preheated oven for 35 minutes or until golden.
    7. Remove from oven and slice the log in pieces as thick as your finger (about 1cm). Transfer the pieces back to the baking tray, one close to the other, cut-side facing up.
    8. Bake again for 10 minutes or until well toasted.
    9. Remove from oven, then cool completely before serving or storing in an airtight container.
