Makes: 6 mini pizzas
250g prepared pizza dough
flour, as needed to roll the dough
100g fresh raspberries
50g Roquefort or other blue cheese
extra virgin olive oil for brushing
100g mozzarella, cubed
salt, to taste

Preheat the oven to 240 C / Gas 10.
Cut the pizza dough into 6 even sizes; place on a floured surface and roll out to about 1/2cm thick. Brush the individual pizzas with oil and top with cubes of mozzarella. Arrange raspberries on each pizza, pushing them down gently so they stick to the dough. Season with salt and transfer onto a baking tray.
Bake in the bottom rack of preheated oven for 8 minutes. Remove from oven, dot with dollops of blue cheese and bake for 7-8 minutes longer in the top rack of the oven. Serve immediately.
