Place the lettuce in a salad bowl.
Peel and slice the beetroot into 1cm thick slices. Use a biscuit or cookie cutter to stamp out heart shapes from each slice of beetroot.
Add hearts to lettuce leaves; drizzle with olive oil and season with salt to taste. Toss and serve, arranging that one or two beetroot hearts can be seen on top of the salad.
