300g plain flour
70g extra virgin olive oil
40g sesame seeds

In a large bowl sift the flour with salt. Make a well and pour in the water and oil. Mix flour and liquid to reach the consistency of a dough.
Sprinkle the sesame seed on a clean working surface. Transfer the dough to the work surface and knead vigorously for few minutes, incorporating the seeds until the dough is smooth and soft. Shape into a ball with your hands, cover with a towel and let stand for 10 minutes.
Preheat oven to 180 C / Gas 4. Brush a baking tray with some olive oil.
Divide the dough in 4 pieces and roll out each piece into a 1 to 2mm thick rectangle, the size of the baking tray. Transfer the first rectangle to the baking tray and with a fluted pastry wheel cut 5x10cm rectangles and prick with a fork.
Bake in preheated oven for 10 to 12 minutes until crisp. Remove from the oven and cool a bit in the baking tray and then transfer to a cooling rack to cool completely. Proceed in the same way with the 3 remaining rectangles of dough. Serve or store in an airtight box.
Of course sesame seeds are totally optional: Replace them with poppy seeds, toasted rosemary or dried onion.
