About this recipe: Here are three simple ideas for decorating a heart shaped sponge cake for Valentine's day or any other romantic occasion. Very easy, yet very nice.


Serves: 4 

  • For the sponge
  • 4 eggs, separated
  • 150g granulated sugar
  • 50ml vegetable oil
  • 1/2 lemon, juiced
  • 1 teaspoon vanilla extract
  • 100ml water
  • 350g plain flour, sifted
  • 16g baking powder, sifted
  • 2 pinches of bicarbonate of soda
  • For decorating ideas
  • mini chocolate chips
  • 125g icing sugar
  • 2 tablespoons water
  • few drops red food colouring

  1. Preheat the oven to 160 C / Gas 2. Grease and flour a heart shaped cake tin.
  2. Beat 4 egg yolks and 150g sugar together using an electric beater until light and frothy; add vegetable oil, lemon juice, vanilla extract and water. Continue to beat until smooth.
  3. Add flour and baking powder; continue to beat until you obtain a smooth, frothy mixture.
  4. Wash and dry the electric beaters. Then use them to beat 4 egg whites with one or two pinches of bicarbonate of soda, until soft peaks form. Fold egg white mixture into the cake batter.
  5. Pour the cake mixture into the tin. Place a smaller heart shaped cookie cutter in the centre of the uncooked cake, pressing it down slightly to ensure it stays in the middle during cooking.
  6. Bake in the preheated oven for 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Remove cake from oven; cool at room temperature.
  7. Transfer onto a serving plate; use a knife to carefully remove the heart shaped cookie cutter (and cake inside it) from the middle of the cake. The following are 3 ideas to decorate the small heart in the centre:
  8. Chocolate chips

  9. Add some mini chocolate chips in the hollow space. You'll get a chocolaty heart within a vanilla heart shaped cake.
  10. Red glaze

  11. Make a glaze by mixing 125g of icing sugar with 2 tablespoons of water. Add a few drops of red food colouring and mix well. Transfer to a pastry bag fitted with a small tip and pipe red glaze into the hollow heart space. You can write a message with remaining glaze if you like.
  12. Covered with glaze

  13. Double the ingredients for the glaze and cover the entire cake in red glaze. Decorate with a ribbon.


This is a light sponge cake and does not really need any filling. But you could slice it horizontally and fill with whipped cream, pastry cream or chocolate ganache. A thin layer of strawberry jam would also work.
