If you have any leftover panettone or Italian Colomba cake to use up before it gets too dry, make these 'cheat' mini apple cakes with Marsala wine, dried fruit and cream and you'll be delighted with the results!

Ingredients
Makes: 5 mini cakes
10 small square slices panettone or sponge cake
Marsala wine, to taste
1 apple, peeled, cored and chopped
50g dried fruit or toasted almonds, chopped
20g caster sugar
1 egg, beaten
5 tablespoons double cream
Method Prep:15min › Cook:30min › Ready in:45min
Preheat the oven to 200 C / Gas 6.
Line the bottom of 5 muffin holes (or ramekins) with a slice of cake; press cake down well and brush with some Marsala to secure in place.
Mix apple, dried fruit or almonds, sugar, beaten egg and cream together in a bowl; spoon mixture equally on top of the cake slices and cover with remaining slices of cake.
Bake in preheated oven for 20 to 30 minutes; serve warm.
