Pizza bianca with pancetta and apple

    This Italian pizza bianca (or white pizza) is flavoured with mozzarella, apples and pancetta, presenting a classic sweet and salty pairing. You can make your pizza dough with this recipe or skip this step and simply top a readymade base.

    Makes: 1 35cm pizza

    • Pizza dough
    • 1 teaspoon dried active yeast
    • 200ml warm water, divided
    • 1 teaspoon caster sugar
    • 4 tablespoons extra virgin olive oil
    • 200g bread flour
    • 100g durum semolina
    • 1 scant tablespoon salt
    • Topping
    • 2 or 3 slices of pancetta or bacon medallions, cut into pieces
    • 300g mozzarella, cubed
    • 1 apple, cored and sliced in wedges

      Pizza dough:

    1. Dissolve yeast in half of the warm water with 1 teaspoon caster sugar. Reserve until foamy, about 5 minutes.
    2. Place flour and durum semolina in a large bowl or in a stand mixer; make a well and add oil, yeast and the remaining water. Mix to make a sticky dough. Transfer onto a floured surface, add salt and knead for 8 to 10 minutes or until smooth and soft. Or fit the stand mixer with the hook, add salt and work for the same time or until the dough sticks around the hook.
    3. Lightly oil a bowl and add dough; cover bowl with a damp tea towel and place in a cold oven with light on. Allow to rise for 2 hours.
    4. Gently punch down the dough, then return to the cold oven for 1 hour longer.
    5. Meanwhile, cook the pancetta in a hot pan with no oil until until golden, about 3 to 4 minutes. Reserve.
    6. Preheat the oven to the maximum heat, about 240 C / Gas 9 in most ovens.
    7. Roll out the pizza dough, stretching it a bit at the time. Make a 35cm disc (or two 20cm discs); scatter half of the mozzarella on top, leaving about a 2cm edge.
    8. Bake in the bottom rack of the preheated oven for 6 minutes.
    9. Remove from oven, add the remaining mozzarella and bake for 3 minutes longer.
    10. Remove from oven, arrange apples in a single layer and bake for 4 minutes longer.
    11. Remove from oven, add pancetta and bake 2 minutes longer. Remove from oven and serve right away.


    For a tastier pizza, drizzle the top with 1 teaspoon of pancetta melted fat. Not really healthy, but tasty for sure.


    You can peel the apple, if you like. I prefer the crunchy skin as a nice contrast to the soft pulp. Slice the apple at the very end or it will turn brown.
