Italian apple fritters

    For these Italian apple fritters I use a batter with whipped egg whites, which makes them soft and tasty. This recipe is typical of Northern region of Emilia Romagna where apple fritters are prepared during Christmas and Carnival time.

    Makes: 15 fritters

    • 1 egg yolk
    • 5 tablespoons plain flour
    • 1 tablespoon water
    • 240ml milk
    • 1 pinch salt
    • 2 egg whites
    • 4 to 6 apples, peeled, cored and sliced not too thin
    • vegetable oil for deep frying
    • icing sugar for dusting

    1. In a bowl, place egg yolk, flour, water, milk and salt. Whisk to prevent lumps and cover. Let rest for 30 minutes at room temperature.
    2. Beat the egg whites to stiff peaks and gently fold in to the batter.
    3. Heat the vegetable oil in a deep frying pan. Dip the apples in the batter and then in the oil, a little at the time. Deep fry until golden on both sides, remove with a slotted spoon and drain on a kitchen paper. Dust with icing sugar and serve.


    Serve with a scoop of vanilla ice cream and dust with ground cinnamon for an easy and delicious dessert.
