Italian ham and mushroom pizza

    Ham and mushrooms are a traditional pizza combination in Italy. You can saute the mushrooms for a few minutes in a little bit of oil and crushed garlic before adding them to the pizza, if you like. Add the mozzarella in 2 batches, one at the beginning at one towards the end of cooking, so it won't be completely melted by the time you'll serve pizza.

    Makes: 2 pizzas

    • Pizza dough
    • 4g dried active yeast
    • 200ml warm water, divided
    • 2 teaspoons caster sugar
    • 500g bread flour
    • 4 tablespoons extra virgin olive oil
    • 1 tablespoon salt
    • For the topping
    • 400g tomato passata
    • 80g mozzarella, cubed and divided
    • extra virgin olive oil, to drizzle
    • salt, to taste
    • 80g fresh mushrooms
    • 80g ham, torn

      Pizza dough:

    1. Dissolve the yeast in half of the warm water with the sugar; set aside until foamy, about 5 minutes.
    2. Place flour in a large bowl or stand mixer; make a well and add oil, yeast and remaining water. Mix to make a sticky dough, adding more water if needed. Transfer onto a floured surface; add salt and knead for 8-10 minutes, until smooth and soft.
    3. Place the pizza dough in a lightly oiled bowl; cover with a clean, damp cloth and place in a cold oven with the light on. Let dough prove for 2 hours.

    5. Preheat the oven to the maximum heat.
    6. Divide the dough in 2 equal pieces. Roll out each piece of dough, stretching it a bit at the time with your hands. Make 2 (35cm) discs and place each one on a flat baking tray. Spread tomato passata and half of the mozzarella on top, leaving a 2cm rim around the edges; drizzle oil on top and season with salt.
    7. Bake in the preheated oven for 10 minutes. Remove pizza from oven; add the remaining mozzarella and mushrooms. Bake for 5 minutes; add the ham and cook for another 3 minutes.
