Baked sea bream with olives and tomatoes

    A quick and tasty recipe for Italian style baked fish with cherry tomatoes, olives and white wine. Replace sea bream with sea bass or thick cod fillets.

    Ingredients
    Serves: 4 

    • 3 whole sea bream fish, about 500g each, gutted
    • 1 lemon, sliced
    • 7 to 8 cherry tomatoes, halved
    • 2 tablespoons pitted and chopped black olives
    • extra virgin olive oil, to drizzle
    • salt and freshly ground pepper, to taste
    • 2 or 3 sprigs fresh parsley, chopped
    • 100ml white wine

    1. Preheat the oven to 180 C / Gas 4. Line a baking dish with parchment paper.
    2. Wash the fish under running water and pat dry with kitchen paper. Season the cavity of each fish with salt and pepper and place 1 slice of lemon inside the cavity. Arrange the fish in the baking dish.
    3. Scatter the olives, cherry tomatoes and remaining lemon slices on top of the fish; season with salt, pepper and chopped parsley. Pour over a generous drizzle of olive oil.
    4. Bake in the preheated oven for 10 minutes. Remove from oven; add the white wine and bake for 10 minutes longer. Serve right away.
