Bread pudding with raisins

    The almond topping gives this simple bread pudding a nice crunch.

    Serves: 12 

    • 300g dry white bread, sliced
    • 1L milk
    • 3 eggs
    • 200g caster sugar
    • 2 teaspoons vanilla sugar
    • 150g raisins
    • 50g unpeeled almonds, chopped
    • 1 tablespoon caster sugar
    • 1 teaspoon ground cinnamon

    1. Soak the bread in the milk.
    2. Preheat oven to 180 C / Gas 4. Line a 26cm cake tin with greaseproof paper.
    3. In a bowl, whisk the eggs with the sugar and the vanilla sugar. Lightly squeeze bread and add to the mixture. Stir in the raisins.
    4. Tip into tin and even it out with a spatula. Sprinkle with almonds, sugar and cinnamon.
    5. Bake till puffed up and golden brown, about 50 minutes.
