Called Crocchette in Italian, these moreish balls of fried mozzarella cheese are sure to please. Serve these balls at your next party. They will go fast! Make sure to drain all the water from the mozzarella, so the mixture is not runny.

150 to 200g mozzarella cheese, well drained and chopped
3 tablespoons plain flour
salt and pepper, to taste
1 handful grated Parmesan cheese
dried breadcrumbs, as needed
vegetable oil for deep frying

Place in a food processor the mozzarella, egg, flour, salt, pepper and grated Parmesan. Mix everything until finely chopped and relatively smooth.
Make small balls with the mixture. Roll them in the breadcrumbs.
Heat the vegetable oil and add the mozzarella balls, a few at the time. Deep fry until golden on all sides.
Remove with a slotted spoon and drain on kitchen paper. Serve straightaway.
