About this recipe: Yummy Italian marzipan biscuits, flavoured with lemon zest and rolled in sugar. Traditional gluten-free Christmas treats, great to serve year around.


Serves: 10 

  • 600g ground almonds
  • 500g caster sugar
  • 2 eggs
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • caster sugar for rolling

  1. Place ground almonds in a bowl with sugar, eggs, lemon zest and vanilla. Work all together to get a smooth dough.
  2. Preheat the oven to 200 C / Gas 6. Butter and flour a baking tray or line with parchment.
  3. Make some balls with the dough, the size of a walnut. Roll in more sugar and place on the prepared baking tray.
  4. Bake in the preheated oven for 10 to 15 minutes. Remove from oven, gently remove from the baking dish, cool and serve.
