Rice frittata

    This is an easy frittata for one that's great for a quick lunch and perfect for using up leftover rice. Add any other ingredients that you like, such as red onion or peppers.

    Serves: 1 

    • 80 to 100g of cooked rice
    • 2 eggs
    • 2 tablespoons grated Parmesan cheese, or to taste
    • salt to taste
    • 1 teaspoon olive oil

    1. In a large bowl, beat the eggs, cooked rice, grated Parmesan and salt. You can add more ingredients, such as sliced vegetables, at this stage if you like.
    2. Heat oil in a pan, add the egg mixture, swirling the pan to spread it evenly. Cook until the edges are dry, flip gently with a spatula and cook on the other side. Serve.
