    About this recipe: Don't be put off by the inclusion of carrots in this porridge- the long, slow cooking brings out a subtle sweetness that works perfectly with the cinnamon. A perfect and healthy breakfast or lunch.

    Ingredients
    Serves: 1 

    • 1 medium carrot, grated
    • 40g porridge oats
    • 235ml water (or milk for richer porridge)
    • 1 teaspoon ground cinnamon
    • 1 pinch salt
    • brown sugar or sweetner, to taste
    • 1 to 2 tablespoons raisins (optional)

    Method
    Prep:5min  ›  Cook:25min  ›  Ready in:30min 

    1. In a large saucepan, add all the ingredients, and bring to the boil. Reduce the heat and simmer gently for approximately 20 minutes, stirring occasionally to prevent burning.
    2. The porridge is ready when there is no excess water, and the oats and carrots have softened. Enjoy with a extra sprinkle of cinnamon, or drizzle of honey.
